Even though I work from home, I still work all day and when I’m done creating awesome videos for you, I’m not really interested in spending hours in the kitchen.  So, I have a rotation of quick, simple and delicious meals that my family is willing to eat and I can whip up in a jiffy.

Bonus?  They’re not going to break your calorie bank, either!

Tortellini with Meat Sauce
1 zucchini = 20 calories
1 ½ bags of cheese tortellini = 1205 calories
1 jar mezzetto roasted garlic sauce = 660 calories
1 tbsp olive oil = 130 calories
1 pound 93% lean ground beef = 680 calories
Optional:  parmesan cheese to top

Cook tortellini according to package instructions separately. In a large skillet with olive oil, cook the ground beef. Add chopped zucchini and sauce. When cooked, drain tortellini and add to meat sauce. Serve and enjoy!

TOTAL APPROXIMATE CALORIES = 2695
Makes 6 servings, at 450 calories each

Egg Roll in a Bowl
4 cups cooked white rice = 800 calories
1 tbsp olive oil = 130 calories
1 package Isernio’s chicken sausage = 560 calories
Garlic = 10 calories
2 packages shredded cabbage = 175 calories
¼ cup reduced sodium soy sauce = 40 calories
1 tsp ginger
½ tsp ground pepper
Chopped green onions = 10 calories

Cook rice separately. In a large skillet with olive oil, cook the sausage and garlic. When thoroughly browned and cooked, add cabbage, soy sauce, ginger, and pepper. Add the green onions immediately before serving. Serve on a bed of fluffy rice and enjoy!

TOTAL APPROXIMATE CALORIES =  1725
Makes 4 servings, at 430 calories each

Black Bean Burgers
2 cans reduced sodium black beans, drained and rinsed = 770 calories
1 medium onion, chopped = 45 calories
1 egg = 70 calories
Garlic powder
Ground pepper
Cumin
½ cup plain bread crumbs = 200 calories
1 tbsp olive oil = 130 calories
6 slices sharp cheddar cheese = 540 calories
6 thin buns = 840 calories
Spinach = 5 calories
Ketchup = 10 calories

Drain and rinse black beans. Mash thoroughly in a food processor or with (what I use) a pastry cutter. Add onions, egg, garlic powder, pepper, cumin and bread crumbs. Mix until all ingredients are thoroughly combined, then form into patties. Heat the olive oil on a large flat pan, add patties. Cook on medium-high until brown and heated through (about five minutes on each side). Serve with the toppings of your choice.

TOTAL APPROXIMATE CALORIES = 2510
Makes 6 servings, at 418 calories each

Honey Garlic Chicken Stir Fry
2 pounds of chicken thighs = 1200 calories
1 tbsp olive oil = 130 calories
Large bag of Stir Fry Blend veggies = 120 calories
½ cup honey = 480 calories
½ cup reduced sodium soy sauce = 80 calories
Garlic
Red pepper

Heat olive oil in a large skillet and cook chicken thighs until there’s no pink in the middle. Remove chicken thighs from pan and add vegetables. If desired, add 1/4 cup of water and place a lid on the pan to steam. While veggies are cooking, mix remaining ingredients in a small bowl and cut the chicken into bite sized chunks. Add chicken and sauce to pan and combine thoroughly. Serve and enjoy!

TOTAL APPROXIMATE CALORIES = 2010 calories
Makes 5 servings, at 402 calories each

Chicken Soft Tacos
Frozen cooked chicken strips = 440 calories
1 tbsp olive oil = 130 calories
Onion = 45 calories
Corn tortillas = 400
Crumbling cheese = 360 calories
Guacamole = 200 calories
Cherry tomatoes = 10 calories
Lime juice

Heat olive oil in a large skillet, add chopped onions and stir until translucent. Add frozen chicken strips and cook until heated all the way through. Serve on warm tortillas with the toppings of your choice.

TOTAL APPROXIMATE CALORIES = 1585
Makes 4 servings, at 396 calories each
