SWEET POTATO LIME CHICKEN
1 Tbsp olive oil
4 medium sweet potatoes, 480 calories
2 pounds of boneless, skinless chicken thighs, 1610 calories
1 can of black beans, drained and rinsed, 330 calores
For sauce:
½ cup of chicken broth, 10 calories
¼ cup lime juice, 15 calories
2 Tbsp brown sugar, 110 calories
Cumin and garlic, to your taste (I like a LOT of both!), 25 calories
TOTAL CALORIES for entire dish = 2700 calories, six servings at 450 calories each
Cook chicken thighs in a large pan with the olive oil, while microwaving the scrubbed sweet potatoes until soft enough to chop easily (about 4 – 7 minutes, depending on size and thickness of potatoes)
Chop sweet potatoes into 1-inch chunks, remove chicken from the pan and add sweet potatoes and sauce. Chop the chicken into bite-sized pieces, then return to pan and add black beans.
When black beans are heated through, serve with toppings of your choice.
